Manjari Chocolate Pyramid

  • 12 oz. Valrhona Manjari Chocolate
  • 14 oz. Unsweetened Chocolate
  • 1 ¼ cups Water
  • 12 oz. Sugar
  • 1 lb 2 oz. Unsalted butter, room temperature
  • 12 each whole eggs
  • 6 oz. sugar

Bring the water and 12 oz. sugar to a boil. Remove from the heat and add the chocolate. Stir until the chocolate is melted and completely incorporated. Add the butter in chunks, stir until melted. Set aside.

Whip the eggs with 6oz sugar at high speed for about 3 minutes. The mixture should be light and fluffy. Do not over whip. Very gently, fold the melted chocolate into the egg mixture. The chocolate may be warm.

Divide the batter between the prepared pans. Place the pans in hot water bath. Bake immediately at 350° F. Preheat the oven. Bake for approximately 30 minute or until the tops are firm. Cool and remove from pans. Slice and serve with your favorite ice cream or fresh fruits.
